I was just wondering if anyone knows if team 1991 is actually Apple's team or just someone using their name?

Since there is no official mention of a Folding@home team # on the Apple.com web site, it is just someone using their name. And lot's of people have joined that team, so it's not just some"one" using it.
Lower team numbers tend to be the most original team for any organization, but there are several "Apple" teams, OSX teams, etc. Find one with a good community of people behind the team, with their own forum, etc., if that's what you want.
