It gets better once you get used to it. No one expects anyone to transition to new UI straight from get go.
If you need finer control, in settings you can unlock Advanced settings where you can create resource groups for each of your devices (CPU and GPU). Those resource groups are equivalent of Slots in v7.

v7 is simple because you have been using it for very long time.
v8 is much simpler :P
