Turns out that it really was an overclocking issue. I have since brought the clock speeds down and my GPU is going through work units normally. Thanks for all of your help though.

Leave it at stock clocking. I have 7 gpus none are overcloked and run fine. Yeah, I think what I plan to do is tone down the clock speeds and memory speeds here and there until I no longer run into issues. My GTX 1660 Ti will begin a work unit and everything will be normal. It says it will take around a day as normal, then once the GPU begins folding the timer reduces to around an hour and 30 minutes depending on the workload. But after a minute or so it simply stops. I get only a couple hundred point...
